Barrio Bread: A Tucson Icon
Tucson is home to a small storefront where the line usually wraps around the block before the sun is even high. They aren't lining up for a trend; they’re lining up for the best bread in the Southwest. Located in a quiet corner of Broadway Village, Barrio Bread has become a mandatory stop for anyone traveling through Southern Arizona.

Don Guerra, the baker behind the counter, received the James Beard Award for his commitment to heritage grains. He collaborates with local farmers to revive ancient seeds that have grown in the Sonoran Desert for centuries. The result is a selection of bread that serves as a literal taste of the Arizona landscape.
Our Haul
We documented five distinct breads during our visit. Each one offers a different profile of the desert’s agricultural history.

- Heritage: This is the cornerstone of the bakery. It uses White Sonoran Wheat to create a nutty, complex flavor. The crust often features a beautiful stenciled saguaro, making it a visual icon of the Southwest.
- Pain Au Levain: This loaf serves as the benchmark for traditional French baking. The recipe avoids commercial yeast, opting instead for a natural sourdough culture and a long fermentation process. The resulting bread offers a crunchy crust and a light, airy interior. It is the perfect foundation for any meal.
- Apricot Cranberry: This loaf is a vibrant balance of sweet and tart. Large pieces of dried fruit are folded into the dough, providing a chewy texture that pairs exceptionally well with breakfast.
- Cranberry Walnut: The inclusion of walnuts adds an earthy richness to the cranberries. It is a hearty, dense bread that works perfectly on a local cheese board.
- European Rye: This loaf features a slender, circular shape and a profile rooted in traditional baking. It has a dense, substantial texture that holds up well to bold savory toppings or a simple spread of salted butter.
